Pacamara originated in El Salvador through crossbreeding of the local Pacas variety with Maragogipe, a variety known for its large seeds and fruity profile. This unique hybrid is synonymous with cup quality in the country. This coffee was honey processed, meaning that after the cherry’s skin was removed the seeds were dried with their sweet, sticky mucilage still intact. This processing method plays up the fruit tones of this variety, resulting in a cup that is rooted in brown sugar sweetness, with layers of juicy, tropical fruit as it cools.

Brewed my first cup this morning and the fruitiness really comes through—exactly what I hoped for from the Pacas and Maragogipe cross. Grounds smelled sweet before hitting the water, and the honey process gives it a smooth, lingering finish. This one’s earned a permanent spot in my rotation.

The beans are massive—bigger than any I've brewed—and the cross with Maragogipe really shows in the cup, giving it a fruity brightness that lingers nicely. Took a couple of tries to dial in the grind, but once I did, the honey sweetness came through perfectly.

Christopher ★★★★★

The honey process really lets the Pacamara’s fruity side shine through, and the cup is noticeably sweet without any added sugar. I brewed it as a pour-over and the body felt silky, exactly what I hoped for from a cross with Maragogipe.
